The Red White and Blue Sweet Summer Salad! (1)

Sometimes simple is simply DELICIOUS! I can't get over how much I enjoyed this salad! Normally I'm not a cheese mixed with fruit kind of gal, I'm not sure why. The sweet fruit and the salty, creamy feta did make a great combo!

I also rarely buy salad dressing, but my attempts at recreating a sweet poppy seed dressing have all flopped. So I caved and bought this at Trader Joe's...

It's filled with a lot of sugar, 2 tablespoon have 10g with 90 calories, 5g of fat, and no fiber, but a little goes a long way. I stuck with 1 tablespoon for this salad and it was perfect! (note: I just heard Panera's fat Free Poppy Seed is now available in stores but I haven't seen it.)

Ingredients

  • 3-4 cups of fresh romaine lettuce cleaned and torn (you could just use the bagged stuff)
  • About ½ cup fresh blueberries
  • About ½ cup fresh strawberries cut in small chunks
  • 1 oz (28g) Crumbled Feta
  • 1 tablespoon Sweet Poppy Dressing

Instructions

Wash and prepare all your ingredients.

Allowing nibbles of course. Little guy must have eaten a pound of strawberries himself! He may not have liked the salad but he likes all the ingredients. 😉

Top the greens with the berries and cheese. Drizzle on the dressing and enjoy!

    For the potluck, I used a three-pack of hearts of romaine, 2 C ea. blueberries and strawberry chunks, 8 oz. of crumbled feta tossed with half a bottle of Brianna's poppy seed dressing. (It /is/ a holiday, after all.) This was enough food to 80% fill my big plastic salad bowl, and it looked so pretty. And it was such a success that the bowl is now MIA LOL. I think someone must have taken it away to lick it clean in privacy. Thanks, Roni!

    I loved your recipe - so good!! I barbecued a marinated tri tip and sliced it on top, amazing and instead of feta cheese I used gorgonzola cheese. My husband can't stop telling me how great it is!! Thank you!!

    How many adult side servings would you say your recipe makes? I've got an office potluck lunch on July 3rd, and this salad will be so perfect for it. I'm thinking doubling would give 8-10?

    You may want to try mixing the poppyseed dressing with a little fat free balsamic to reduce the sugar. I tried another salad recipe that called for that and now I use the mix whenever I intend to use poppyseed dressing! Tastes great, love the salad recipe. Thanks so much!

    I never liked fruit on salads either so I was surprised how much I liked this. And yes.. I have a few small tattoos. Considering another one for m y 35th birthday. 🙂

    I'm not quite sure but in the last pic, is that a tattoo in your right... err.. lady part? Anyways, I'm not a fan of fruit on salads, or cheese on salads, but I dig fruits and cheese together as dessert. Does that make sense at all?

    I make a salad very similar with spinach but I have been experimenting with pineapple yogurt instead of the dressing. I add poppyseeds to the yogurt if I have them, if not I just mix a little of the yogurt into the salad. I tweek it with different ingredients each time. It's not as sweet as the poppyseed which suits my family just fine.

    This is the perfect lunch on a day the temperatures are between, hot and gawd it is hot!

    I found Newman's Poppy Seed Dressing but the 13---------13 grams of FAT for 2 Tbsp made me return it to the shelf.
    Holey moley.

    I did find a FF Poppy dressing that Maple Grove Farms of Vermont puts out.

    Doh! I was so excited when the pic came into my email of your salad because I could see poppy seed dressing on it. I immediately clicked over to see how you made it and then saw the big bottle o' Trader Joe. (We don't have Trader Joe's in Southern Illinois.) Phooey. I couldn't wait to find out how to actually make the stuff from scratch. Guess I'll have to figure it out on my own, but I'm glad for the reminder that I need to! Salad looks great!

    i've been making a very similar salad. panera sells their fat free sugar free poppyseed dressing in grocery stores now. it is delicious.

    This is SO funny because I'm making a spinach, strawberry, & feta salad to go with dinner tonight! I'm making an easy dressing with strawberry-balsamic vinegar, olive oil, a squeeze of lemon, salt, & pepper. I'm roasting lean pork chops and carrots to go with it. Too bad I already ate all our blueberries!
