Skillet Enchilada Tips

  • Pan frying the tortillas is an important step. This gives the enchiladas texture and keeps them from becoming mushy.
  • Try substituting ground turkey, reduced fat cheese, and light sour cream for a lightened up version of Skillet Enchiladas.
  • These enchiladas are so easy to customize. Last time I made them, I added additional taco seasonings to the ground beef to kick up the flavor even more.

I think this is the quickest meal I’ve ever made, and who doesn’t love that? It’s great as leftovers as well.

Oh, what a great idea! I love homemade enchilladas but it’s such a pain to make them. I made this tonight with just a few of my own twists: I used cubed chicken instead of beef, and added to that onion, cumin, chili powder, chives, and a chopped red bell pepper. When finished I topped with cheddar jack cheese and sour cream, yum!

My family loves this. I put in a can of refried beans when we have them just to make it a little thicker and to go a little farther. The leftovers are almost even better! I love enchiladas but making them are so messy. This is PERFECT!

I have to admit that I was a little bit skeptical about this recipe, mostly because I was concerned about ending up with soggy corn tortillas in the mix when we ate the leftovers (I cook all of our food for the following week over the weekend). This was not a problem AT ALL. The tortillas ended up being chewy and delicious (just like they would be with an enchilada).

I did modify slightly–I used green chili enchilada sauce (because I’m 32 weeks pregnant, and anything red gives me debilitating heartburn at this juncture =)), added 1 T garlic powder & 1 T cumin, a can of drained black beans, and a cup of frozen corn.

    Delicious!!

I make my enchiladas using flour shells. Would they also work in this recipe? I also use green onion. They have such a great flavor to them. For years I have made this in the crock pot and just cut up the flour shells into bite size pieces. Did not fry them at all and that works really well. A big hit at family functions.

Holy cow, am I the only one who made the mistake of getting medium red enchilada sauce?! I think I found the spiciest “medium” ever and could hardly eat the dish (Raley’s store brand). My husband was drenched in sweat and said he felt like he was on Man Versus Food haha. I’ll be adding shredded lettuce, tomatoes, etc to the left overs.

Delicious otherwise and will definitely make it again with a mild sauce!

FAQs

What is the secret to good enchiladas? ›

Fry each of your tortillas in hot oil before adding in your enchilada filling. This will help keep the tortillas from soaking up too much of your sauce too quickly, which can also cause them to break apart.

Do you fry corn tortillas before making enchiladas? ›

The corn tortillas must be softened before they are rolled and baked in the casserole. Frying them gently in a little oil both softens the tortillas and also greatly enhances their flavor.

What cheese is best for enchiladas? ›

Pepper jack is great too. Queso fresco is soft, not greasy when it melts, cotija adds a dry saltiness to green enchiladas, combine with Jack which is like asadero, mozzarella, or queso quesadilla. If you don't have options, buy a blend and add pepper jack. Use a fresh cheese, like panela or canasta.

Do you put enchilada sauce on the bottom of the pan? ›

What makes enchiladas taste better? ›

Toppings: When it comes to enchiladas, I vote the more toppings the merrier! Any combination of chopped fresh cilantro, sliced avocado, diced red onion (or quick pickled red onions), sliced radishes, fresh or pickled jalapeños, sour cream or Mexican crema, and/or extra cheese would be delicious!

Is it better to cook enchiladas covered or uncovered? ›

Arrange enchiladas, seam-side down, in a 9x13-inch baking dish. Top with taco sauce and remaining 3/4 cup Cheddar cheese. Bake in the preheated oven, uncovered, until cheese has melted, about 20 minutes. Let cool briefly before serving.

Are enchiladas better with corn or flour? ›

Corn tortillas go well with Mexican dishes like tacos, enchiladas, and tamales. They are also perfect for use in tostadas, sopes, and quesadillas. Flour tortillas are often used in burritos, fajitas, and chimichangas. They are also great for making quesadillas, sweet dishes like dessert tacos, and breakfast burritos.

What kind of cheese do Mexican restaurants use in enchiladas? ›

Traditional Mexican enchiladas are usually finished with Mexican crema and queso fresco or cotija cheese, instead of the yellow cheese typical of Tex-Mex enchiladas.

How do you keep corn tortillas soft for enchiladas? ›

Two of the most common Mexican cheeses you probably heard are cotija and queso fresco. These two popular Mexican kinds of cheese have distinctive characters that they add to various Mexican dishes. Queso fresco and cotija cheese are the most common and are often compared to each other for multiple reasons.

Try Val Vita, a is popular tomato sauce in North West Mexico, from there you can ad more spice and condiments, mixed with Pato Sauce can also make the trick for a quick sauce for enchiladas. Can you put too much sauce on enchiladas? ›

Another thing that adversely affects enchiladas is the addition of too much sauce. If you've ever thought, "There is no such thing as too much sauce," you might want to think again. Although it might be tempting to dump the whole serving of sauce in, this can actually be an enormous mistake.

Why did my enchiladas get mushy? ›

Repeat after me: enchiladas use corn tortillas not flour tortillas. Before you roll your enchiladas to bake in a baking dish, gently fry your tortillas in a little vegetable oil. Not too long though because you need to roll them. The oil will keep the corn tortillas from getting soggy.

Should I put foil over my enchiladas? ›

Most enchiladas are baked and covered with foil until heated through. Oven temperatures and baking times vary per recipe, but on average they cook in a 350°F oven for about 25 minutes. Sprinkle the cheese on top of the enchiladas after they are heated through.

How do you keep flour tortillas from getting soggy in enchiladas? ›

Usually when I've made them I just put sauce on top, not on the bottom, and just down the middle so the edges are exposed. And I make the sauce on the thick side so it is not too watery. I bake them in the oven too, and they are never too soggy, but you could just grill to minimise the sauce absorption.
