CURRENT HARVEST OFFERING

As of this posting date, I have availability of half and whole beef that will range from $2.50 per pound of hanging (carcass) weight to $4.50.

As an example, the total cost of a 300 lb #4 half is approximately $1180. This includes $3.10 (there is a 10 cent up-charge for halves) per pound being $930 paid for the beef, plus ~$250 paid to the processor (the processing cost changes based on any add-ons to their normal processing such as making hamburger patties, smoking brisket etc.). A whole beef will be twice that amount. Also, substitute any other option price such as 300 lb #1 being $4.60 per pound half is approximately $1630.

Even if you are not sure which of the below options you would like, please let me know as soon as possible that you are interested.

Q: Why should I choose KRitter Country as my source of grass fed beef?
A: There are many factors involved in producing quality grass fed beef. This includes factors such as forage quality and type, water source, cattle genetics, harvest processor and management. You are acquiring beef derived from my (almost twenty years) experience doing such. I first started growing healthy beef for my family's enjoyment and health benefits and have continuously worked to improve the quality. Note: the farm name was my mothers idea as a tribute to my late father Kenneth Ritter (i.e. KRitter)

The grass fed genetics (the breed of the cattle) that you are acquiring are South Polls that were developed by Teddy Gentry (founding member of the country band named Alabama). South Polls are a custom breed of four breeds of cattle to get specific characteristics and consistently quality grass fed beef. http://southpoll.com/

The seed-stock (originating parents) of this breed were precisely selected using both DNA and ultrasound testing to pick the best of the best. The results are cattle that are smaller framed, fleshy, gentle, tender, tasty, well marbled, more nutritious and are very efficient thriving on only forage. In other words, they do not require the crutches (grains, hormones, de-wormers, insecticides, vaccines) needed for the typical Black Angus and other common breeds.

A analogy that may help; think of your beef here as honey that is a natural and nutritious sweet food, versus 99% of other beef that is a chemically produced synthesized high fructose GMO corn syrup.

One of the many benefits derived from this gourmet grass finished beef genetics that I have invested, is that you get more meat and less bone for your money. Again, Black Angus and other common breeds are genetically selected to be large frame (big boned) and flesh out (grow and marble) on a high carb (grain sugars). South Polls are small frames pack with nutritious meat! One of the most famous cattle producers in the world indicate he wants to see 8lbs of sugar in a 5lb bag. South Polls deliver that bulging package :).

Q: As the lady asked; Where's the beef?
A: Check out the picture, this breed is "Not your daddy's cattle", this is the future of grass fed beef available right now. This is one of my daddies that I nicknamed Sarge. Sarge is a meat maker yet gentle as a pet.

Q: Why do you have options to choose?
A: I strive to offer healthy food to as many people as possible, regardless of your budget.

The below options will be available for processing as schedule permits and your beef can then be picked up a couple weeks after you or I give your processing choices. After I confirm your request, you will be notified with the details of when, where and how for your processing instructions.

Options 1, 2, 3, 4 are lifelong grass fed, farm born and raised to my beyond organic standards. They are also genetics derived from my gourmet grass-fed breed called South Polls.

Your harvest options:
1) (Prime Steers $4.50*)
Steers that are very well fatten; the meat will be the most marbled, tasty, tender and full, thus the full price. Likely around 550-650lbs hanging weight for a whole beef priced at $4.50* per pound to me and then you will pay the processor for their work when picking up the meat (~80 cents per pound).
From this you can get any combination of steaks, roasts, ground beef, specialty cuts, bones and organs (will send spreadsheet upon request).

2) (Choice Steers $4.25*)
Younger steers that are not totally fatten; the meat will be leaner and less full, thus the reduced price and is a great choice if you prefer leaner meat. Likely less than 550 lbs hanging weight at $4.25* per pound to me and then you will pay the processor for their work when picking up the meat (~80 cents per pound).
From this you can get any combination of steaks, roasts, ground beef, specialty cuts, bones and organs (will send spreadsheet upon request).

3) (Prime Cows $3.75*)
Young cows, that had re-productivity issues. They were farm born and raised to my beyond organic standards just as the steers. They should be considered primarily a ground beef animal. Having said that, I and others have had good results with getting the best steaks such as fillets and rib-eyes as well as the best roasts from similar young cows. Weights likely range from around ~400-550lbs hanging weight offered at $3.75* per pound to me and then you will pay the processor for their work when picking up the meat (~80 cents per pound). Again, if you like steaks and roasts, I would consider getting a few as a test to your standards for future offerings of such cows. And if you don't care for the steaks/roasts they could always be cut up for stew meat or shish kabobs. But if you want excellent ground beef, that is a great choice to have it 100% GB as well.

4) (Choice Cows $3.50*)
Cows, that have had a few calves. They were farm born and raised to my beyond organic standards just as the steers. They should be considered primarily a ground beef animal. Weights likely range from around ~550-700lbs hanging weight offered at $3.50* per pound to me and then you will pay the processor for their work when picking up the meat (~80 cents per pound).

Please note: Since they will be 30+ months old in regards to USDA limitations, you may not be able to get all the organs and cuts. Specifically the cuts that include spinal bones and similar for soup bones.

Again, if you like steaks and roasts, I would consider getting a few as a test to your standards for future offerings of such cows. And if you don't care for the steaks/roasts they could always be cut up for stew meat or shish kabobs. But if you want excellent ground beef, that is a great choice to have it 100% GB as well.

5) (Other Cows not lifelong organic $3.00*)
Cows, that have had a few calves. Were bought as calves and may have been exposed to standard of care prior to my purchase. They grew to adults and lived life long to my beyond organic standards just as the steers. They should be considered primarily a ground beef animal. Weights likely range from around ~550-700lbs hanging weight offered at $3.00* per pound to me and then you will pay the processor for their work when picking up the meat (~80 cents per pound).

Please note: Since they will be 30+ months old in regards to USDA limitations, you may not be able to get all the organs and cuts. Specifically the cuts that include spinal bones and similar for soup bones.

Again, if you like steaks and roasts, I would consider getting a few as a test to your standards for future offerings of such cows. And if you don't care for the steaks/roasts they could always be cut up for stew meat or shish kabobs. But if you want excellent ground beef, that is a great choice to have it 100% GB as well.

6) (Coop Cows Non Organic $2.50*)
My desire is for all my supporters to be able to have a freezer full of healthier beef, a main reason I am offering this option. This is also a result of having more demand than supply of my beef invoking me to reach out to some of the farmers I coached for other options. Right now, below is what I have to offer. Further, it is a more cost effective option (likely cheaper than what is available at the store while offering much better quality).
Here are some of the reasons they are still a much healthier option than normal commercial beef.
As adults are:
-not exposed to GMOs
-no grain fed
-no forage sprayed with chemicals
-no regular vaccines
-no regular de-wormers

I will still be handling all parts of the harvest process from delivering to my normal processor to payment.

*Note for all options above, if you do not wish a whole animal the price to me for a half will be $0.10 more. I highly recommend taking advantage of the whole animal pricing by splitting with love-ones.

7) Based on incoming orders I might have a limited amount ~90% lean ground beef. $8 per ~1lb package.

Q: Why should I trust your ability to produce healthy food?
A: I have extensively studied health and nutrition over the past 25+ years. Further, many of my supporters/consumers are practitioners in the holistic health field and offer the latest technologies. As a valued added service to my supporters, I freely offer insight and resources regarding such. Please let me know if I can be of service.

Q: This is my first time joining in your harvest, so I am unsure of what to expect and what I need to do. Can you help?
A: I have offered my harvest for almost twenty years and have a process that will be a guide, as well as my personal support if you need further help.

I often jokingly say "we don't get much done but we sure have fun". But actually we do indeed do both, but I especially
enjoy sharing the blessings, harvests and the beauty of the farm. In the pictures is one of my best friends. A young lady with Cerebral Palsy (due to birthing issues), has not had all the opportunities that many of us have. We do have fun on the farm and here we are enjoying a canary melon along with my four legged babies!

I hope you enjoy some photos of the farm and my babies taken by a NY Times Journalist that followed me around for a week to do a story. He found interest that I am a former aerospace scientist who took over the family farm and converted it to Beyond Organic type operation.

Our farm is third generation family owned/operated and is managed in a holistic, restorative manner that uses managed intensive grazing and beyond organic protocols. The results of the extra effort offers benefits to the land, wildlife, the environment and produces healthy, nutritious and tasty food for you and your love-ones.

Q: Why is this beef so cherished by other discerning, like-minded people?
A: Most of my supporters either are very health conscious and want to optimize their health to live a long and healthy life or have a serious health challenge they are healing.

This beef offers more nutrients and vital building blocks our bodies require and do not include the toxins that add burden.

Our beef offerings are farm born and raised, their entire life history is known to be raised with:

-Diet consists (only) of variety of grasses, legumes and hay
-Free access to organic kosher salt, kelp and other supplements
-Access to a new/fresh paddock at least once a day (everyday) that has grown new nutrient rich forages for at least one month. This constant moving allows for a much healthier animal and allows the land to recover and rejuvenate to a more natural state.
-The water source is a nine hundred (900) foot deep well that is powered via sun energy.
-Ultra humane production and low stress animal handling to such an extreme many of our animals can be pet as if they are a favorite dog.

What we don't do:
-No, let me emphasize NO GMO grown or fed!
-No hormones
-No antibiotics
-No vaccines
-No chemical de-wormers
-No artificial fertilizer used on forage
-No herbicides broadcast on forage
-No pesticides broadcast on forage
(please note: the above "No's" are yes on almost all farms including most grass fed operations)

Please note:
Experimental MNRA/gene editing injections are planned (assumed not already implemented) for the beef industry and reportedly already in use in the pork industry. I have not injected anything into my livestock and have no plans of such.

Since no standards are set and/or verified for the Grass-fed term, here are some of the shortcuts other Grass-fed producers (including others in our area) are feeding:

-corn silage made from GMO corn sprayed with glyphosate herbicide.
-soybean hulls from GMO soybeans sprayed with glyphosate herbicide.
-cotton seed products from cotton sprayed with even more dangerous herbicides as cotton is not considered and regulated as a food crop.
-free choice of GMO soy and corn grain products as long as they have access to pastures.
