Garlicky Oven Roasted Mushrooms

My favorite thing about this roasted mushroom recipe is how much flavor you get from so few ingredients and such simple steps. Oven roasted mushrooms generally need muchless oil than stovesautéedmushrooms. In the oven, they baste in their natural juices, so you only need a light coating of oil, and they always come out perfectly tender and juicy.

Roasted mushrooms recipe ingredients

  • mushrooms
  • olive oil
  • garlic cloves
  • chives
  • salt and pepper
  • garlic powder

What's the difference between roasted mushrooms and baked mushrooms?

The words baked and roasted are often interchangeably used, but they technically have two meanings. Both methods refer to a dry-heat source in the oven, and The Kitchn explains how the temperature for roasting is actually higher than for baking, which results in a browned-exterior with moist interior. Which also means YUMMM!

These oven roasted mushrooms...

  • are vegan, vegetarian, gluten free, paleo, keto, low carb, and whole 30 approved
  • take 5 minutes to prep and about 10 minutes to bake
  • require only a light coating of oil to bake, unlike sautéing
  • are the juiciest mushrooms that literally burst with flavor
  • can conveniently cook in the same oven with roast chicken, fish, and beef entrees at 400°

Roasted mushroom recipe steps

  1. Preheat oven to 400°.
  2. Add mushrooms to bowl with olive oil, fresh garlic, fresh chives, salt, and pepper.
  3. Toss to combine (you want the garlic to stick to the mushrooms).
  4. Place on baking sheet and dust mushrooms with garlic powder.
  5. Bake 10-12 minutes until sizzling. Serve warm.

Oven roasted mushrooms can be baked in conventional oven or countertop oven. They're perfect for any occasion and require minimal cooking skills. I'm sure you'll find them positively scrumptious, so make plenty!

Recipe Notes

What kind of mushrooms can I use for this roasted mushroom recipe?

I personally like to use regular white mushrooms or baby bellas for this recipe. You can roast any kind of mushroom, but you might have to adjust oven time if they're significantly larger or smaller than your everyday button mushroom.

Can I use pre-sliced mushrooms for this recipe?

You can, but you'll want to cut the roasting time in half because sliced mushrooms will roast more quickly than whole mushrooms.

What entrees go with roasted mushrooms?

  • Air Fryer Whole Chicken
  • Baked Chicken Thighs
  • Herb Roasted Turkey Breast
  • Baked Chicken Legs
  • Broiled Salmon or Grilled Salmon
  • Spiral Ham

Yes! Just follow the recipe instructions for storage and then reheat on a medium heat setting using your favorite appliance until warmed through (microwave, air fryer, oven). Thank and enjoy!

I’ve made these twice before. Every time I do, the only complaint I get is that I didn’t make enough! 1 lb of creminis is about 4 per person when you’re serving 3 adults. They are absolutely scrumptious and fill of flavor. And I love how easy and quick they are to make.

Hello! I was just wondering if roasted mushrooms release water as they do(and a lot of it) when I try to sauté them. I'm trying to cook them healthy. Grilling and microwaving them are the options given, but I don't like either! Roasting them appears to be a good alternative to cooking healthy!
    Thanks!

    Reply

    • The Kitchen Girl says

Hi Jo, I'm not sure, actually. I can't say that roasted mushrooms releases more or less water than sauteing. I just know they're super juicy when they come out of the oven. Perfectly juicy LOL. Let me know if you make them!

I followed the recipe and the mushrooms turned out very nice. Only, I baked for a little longer with the lid on and I did put more garlic on the mushrooms. I liked that they are very healthy, almost no oil and low in calories in carbohydrates, but not at the expense of flavour.

Is it better to roast or saute mushrooms? ›

Roasting mushrooms is easy and one of the best ways to cook them. I roast mushrooms with olive oil and herbs until golden brown, then stir in fresh garlic a few minutes before they come out of the oven. Our oven-roasted mushrooms are simple and so flavorful.

How to saute mushrooms so they are crispy? ›

2Heat the olive oil in a large, wide skillet over medium heat. 3Add the mushrooms and spread into one layer. Then cook, without moving, until browned on one side, 3 to 5 minutes. 4Stir then cook another 3 to 5 minutes or until mostly golden brown on all sides.

How do you get the most flavor out of sauteed mushrooms? ›

Oil and butter: For the best and richest flavor, cook the mushrooms in a mixture of olive oil and butter. Mushrooms: A pound of sliced button mushrooms should comfortably serve about four people. Wine: A tablespoon of red cooking wine enhances the flavor of the sautéed mushrooms.

What we should not do before cooking mushroom? ›

Never salt the mushrooms before cooking. Salt draws out moisture and will therefore make them extremely mushy.

Do I wash mushrooms before roasting? ›

Regardless of the different schools of thought on how to get that pesky dirt off mushrooms, there is no doubt that it is important to clean mushrooms before cooking, one way or another. Vegetables (and fruits) can sometimes carry germs that can lead to foodborne illness, so it is important to be mindful.

What type of mushroom is best for roasting? ›

For our roasted mushrooms recipe, we use cremini mushrooms but you can make it your own and roast portobello, shiitake, or button mushrooms – whatever you have available! Cut into quarters and drizzle with olive oil and salt! Pro tip: place them cut-side down in a single layer to get that crispy bottom!

What is the best method of cooking mushrooms? ›

Many don't know that boiling is one of the best ways to cook mushrooms. Simply boil the mushrooms in as little water as possible. You want to ensure that the water boils off just as the mushrooms are reaching an al dente state. As soon as the water is gone and the mushrooms have a nice bite to them, add some olive oil.

What is the healthiest way to cook mushrooms? ›

The researchers concluded that the best way to cook mushrooms while still preserving their nutritional properties is to grill or microwave them, as the fried and boiled mushrooms showed significantly less antioxidant activity.

Should you season mushrooms when sautéing? ›

The bottom line: Although salting the mushrooms at the beginning of cooking does not always cause them to release much liquid, it does make them cook more slowly and gives them a less desirable texture.

Why are my sauteed mushrooms rubbery? ›

Constantly sautéeing and stirring the mushrooms means that they won't have the opportunity to become golden-brown. Without proper caramelization, mushrooms are nothing but rubbery gray nubbins.

How do you know when mushrooms are sauteed enough? ›

You should hear a sizzle. (If the fat isn't hot enough, the mushrooms will start to water out and steam instead of sautéing.) Cook the mushrooms 4 to 5 minutes or until they're tender and lightly browned.

What brings out mushroom flavor? ›

Cook in butter and oil for richness

Butter makes everything better, but in some cases it brings out a true luxuriousness of a dish. This is the case for mushrooms. Bring out their umami taste by letting them sauté in a pan of melted butter. Morels are an absolute treat sautéed in butter until golden brown.

How do you increase the flavor of mushrooms? ›

The study demonstrated that cooking methods have an effect on the flavor profile of white mushrooms. Sear mushrooms for a more intense roasted, charred and smoky flavor and overall aroma. Roast mushrooms to get more sweet, salty and umami tastes with caramelized, nutty and buttery flavors.

What balances mushroom flavor? ›

Add acidic ingredients: Adding acidic ingredients like lemon juice, vinegar, or tomatoes can help balance out the flavor of the mushrooms. Use other strong flavors: Adding other strong flavors like garlic, onions, or herbs can help mask the mushroom taste.

Should mushrooms be cooked before onions? ›

Do You Sauté the Onions First? To keep the onions from cooking in the mushroom juices, wait to add the onions until the mushrooms have released their excess liquid and almost all of that liquid has evaporated. Once you get there, add the onions and let them sauté and brown in the fat alongside the mushrooms.

What cooks faster mushrooms or onions? ›

The onions and peppers are going to take around 5-8 minutes to get good color but retain their snap. I would cook the mushrooms separately - they're going to take a little longer 8-10 minutes, because they give off a bit of moisture. When the mushrooms are done, add everything else to pan to meld flavors.

Should you cook mushrooms before? ›

Boiled mushrooms brown faster and more evenly than raw; you don't have to wait for them to cook down, so you don't have to worry too much about crowding the pan. As long as they eventually make contact with a hot, oiled skillet, boiled mushrooms will brown nicely.

Why do you cook mushrooms first? ›

Starting Your Mushrooms In Water Intensifies Their Flavor

When we cook mushrooms, both the water and the air are forced out of the hyphae, collapsing the air pockets and preventing any water or oil from entering the mushroom.
