There are some good things about a pasta passion – you’re be eating a lot of eggs, hard cheeses and meat. Plus a dose of lycopene from all those tomatoes. But, for guilt-free pasta, you have to go low carb. Luckily, there are good recipes out there for many of your low carb pasta favorites. Carbonara was my go-to daily pasta lunch back in the Fat Old Days. I’ve eaten my own bodyweight in spaghetti, eggs and bacon over the years. I recall once when suffering culture shock in Tokyo that I ate two (maybe three) times on the same day. So it qualifies as comfort food, for me at least.

So I was really pleased to find a great keto low-carbonara recipe at last. This one uses Konjac Shirataki pasta noodles, which has zero net carbs and zero calories. Which leaves it up to the sauce to nourish you. It’s heavy on cream, parmesan, eggs, bacon and chicken breast, so no problem there!
